Dhokla is a traditional Indian savory snack originating from the state of Gujarat in Western India. It is a soft, fluffy, and spongy snack made primarily from fermented rice and chickpea flour, known as besan. Dhokla is popular not only in Gujarat but also across India and is enjoyed as a breakfast item, a snack, or even as a light meal.

The preparation of dhokla involves a fermentation process, which gives it its characteristic spongy texture and slightly tangy flavor. Here are the recipes of Dhokla:

Fluffy White Dhokla

Ingredients:

3 cups Rice (Soaked)

1 cup Urad Dal (Soaked)

2 tsp Asafetida

1 tsp Sugar

Water, as needed

1 inch Ginger

4-5 Green Chilies

Salt, to taste

2 tbsp Yogurt

½ tsp Eno

1 tsp Crushed Black Pepper

1 tsp Red Chili Powder

1 tbsp Chopped Coriander Leaves

Method:

 

Grind soaked rice, urad dal, asafetida, sugar, and water into a smooth batter.

 

Ferment the batter overnight.

 

Coarsely grind ginger and green chilies and add to the batter.

 

Mix in salt and yogurt.

 

Add Eno and mix well.

 

Steam the batter for 15-20 minutes.

Garnish with crushed black pepper, red chili powder, and chopped coriander.

Cool, cut into pieces, and serve.

Nylon Dhokla

Ingredients:

250 ml Water

1 Lemon Juice

2 tbsp Sugar

Salt, to taste

1 inch Ginger

5-6 Green Chilies

2 ¼ cup Gram Flour

1 tsp Turmeric Powder

1 tsp Eno

Pinch of Citric Acid

1 ½ tbsp Oil

For Sugar Syrup:


¼ cup Water

2 tbsp Sugar

For Tadka:

 

1 ½ tbsp Oil

1 tsp Asafoetida

4-5 Green Chilies

1 tsp Mustard Seeds

Sprig of Curry Leaves

Method:

 

Mix water, lemon juice, sugar, and salt.

 

Grind ginger and green chilies and add to the mixture.

 

Gradually add gram flour to make a smooth batter.

 

Mix in turmeric powder, Eno, and citric acid.

 

Steam the batter for 15-20 minutes.

 

Prepare sugar syrup and pour over the dhokla.

 

Prepare tadka and pour over the dhokla.

 

Cut into pieces and serve.

 

Grilled Dhokla Sandwich

Ingredients:

 

4 cups Readymade Dhokla Batter

Salt, to taste

Crushed Black Peppercorns

Crushed Corn Kernels

Finely Chopped Mixed Capsicum

Grated Cottage Cheese

Crushed Green Chilies

Chaat Masala

Chopped Fresh Coriander Leaves

Green Chutney

Ghee

Mustard Seeds

White Sesame Seeds

Method:

 

Prepare dhokla and cut into roundels.

 

Mix corn, capsicum, cottage cheese, chilies, masala, and coriander for stuffing.

 

Spread chutney on roundels, add stuffing, and cover with another roundel.

 

Grill with ghee and tadka.

 

Serve hot.

 

Dhokla Pizza

Ingredients:

 

3 cups Dhokla Batter

Pizza Sauce

Salt

Olive Oil

Green Capsicum

Sweet Corn Kernels

Red Chili Flakes

Dried Oregano

Black Olives

Mozzarella Cheese

Method:

 

Prepare dhokla and cut into roundels.

 

Spread sauce, toppings, and cheese on roundels.

 

Grill until cheese melts.

 

Serve hot.

 

Cabbage Dhokla

Besan

Finely Chopped Cabbage

Curds

Chilli Powder

Asafoetida

Coriander-Cumin Seeds Powder

Turmeric Powder

Fruit Salt

Oil

Mustard Seeds

Chopped Coriander

Method:

Prepare batter and steam.

Temper and garnish.

Serve hot.
