Bhubaneswar, Oct 18: Odisha’s Dahibara Aloo dum has recently garnered a new admirer in Michelin-starred chef Vikas Khanna.
During his recent visit to Odisha, Khanna had the delight of savoring this delectable street food. He was captivated by the dish's exquisite blend of flavors, varied textures, contrasting temperature, vibrant colors, and the intricate cooking method. Khanna openly declared his deep affection for these unique delicacies, proclaiming himself a lifelong fan.
Khanna shared a video on his social media platform, which captured the moment when he indulged in this beloved Odia dish. In the video, Khanna's enthusiasm was palpable as he delved into the dish with an eager bite. He also inquired about each component and ingredient that contributed to the dish's remarkable taste.
It appears that Khanna's fondness for this Odia specialty is profound, as he was later spotted recreating it in Mumbai upon returning from Odisha. He shared the process of making Dahibara Aloo dum and captioned the post, "Recreating one of my favorite dishes from Odisha."
The video depicted Vikas Khanna meticulously crafting the Dahibara (lentil balls). He then proceeded to prepare the Aloo dum and the green chili curd to infuse that authentic street food zest into Dahibara Aloo dum.
Towards the end of the video, he elegantly plated the dish and relished it alongside another chef who had assisted in the preparation.
Within just a day of being shared on Instagram, Khanna's post garnered over 360K views and received more than 27,000 likes.
