Instructions

 Preheat the oven to 325°F (163°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to create the crust.

In a large bowl, beat cream cheese until smooth. Add sugar and vanilla extract, mixing until well combined.

Add eggs one at a time, beating well after each addition. Mix in sour cream and flour until smooth.

Pour the batter over the crust and smooth the top. Bake for about 55-60 minutes or until the center is set.

Allow the cheesecake to cool completely in the oven with the door ajar. Refrigerate for at least 4 hours or overnight before serving.

Strawberry Swirl Cheesecake:

 Ingredients:

  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Instructions:

 Prepare the crust and cheesecake batter as described in the Classic New York Cheesecake recipe.

In a blender or food processor, puree the strawberries with sugar and lemon juice until smooth.

Pour half of the cheesecake batter over the crust. Spoon half of the strawberry puree over the batter. Repeat with the remaining batter and strawberry puree.

Use a knife to create a swirl pattern by gently running it through the batter and strawberry puree.
