Bhubaneswar, Jan 3: Dhuska, also known as Dhooska or Dushka, is a popular snack in the Indian state of Jharkhand. It is a deep-fried pancake made from rice and lentil batter.
Here's a simple recipe for making Dhuska:
Ingredients:
1 cup rice
1/2 cup split black gram (urad dal)
1/4 cup Bengal gram (chana dal)
1/4 cup yellow split peas (yellow dal)
1 onion, finely chopped
2-3 green chilies, finely chopped
1 inch ginger, grated
1/4 cup chopped coriander leaves
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
Salt to taste
Oil for deep frying
Instructions:
Rinse the rice, urad dal, chana dal, and yellow dal together. Soak them in water for at least 4-6 hours or overnight.
After soaking, drain the water and grind the rice and dals together to form a smooth batter. Add a little water if needed.
Transfer the batter to a mixing bowl. Add chopped onions, green chilies, grated ginger, chopped coriander leaves, cumin seeds, asafoetida, and salt. Mix well to combine all the ingredients.
Heat oil in a deep frying pan over medium heat.
Take a small portion of the batter and drop it into the hot oil using a spoon. Fry until the dhuska turns golden brown and crispy on both sides.
Remove the fried dhuska using a slotted spoon and place them on a paper towel to absorb any excess oil.
Repeat the process with the remaining batter, frying a few dhuskas at a time.
Serve the dhuska hot with green chutney, yogurt, or any sauce of your choice.
