Master making perfect tangy pink pickled onions at home
Creating restaurant-style sirke wale pyaaz at home is surprisingly simple when following expert culinary techniques. These tangy, crisp pickled onions are famous for cutting through rich gravies, making them essential for heavy kebabs and classic North Indian dishes. Originating from traditional dhabas, this vibrant pink condiment has become globally recognized for elevating ordinary meals into memorable dining experiences. People everywhere love how easily it transforms simple household dinners.
Chef Mondal from ITC, shares his precise method for replicating this beloved flavour. Getting that delicate balance between a good crunch and the first hint of pickling is crucial for success, according to the culinary expert. He emphasises that perfect results require the right kind of onions, a well-balanced pickling liquid, and sufficient resting time before serving.
Choosing the ideal inputs
Small Indian onions or shallots work best because they naturally hold a nice crunch and subtle sweetness. Foodies at home should peel them while keeping the root intact, then make a small cross at the top to allow flavors to penetrate deeply. Small onions paired with vinegar, water, salt, and sugar form the foundation of this popular side dish.

Crafting vibrant pickling liquid
Finding harmony in your liquid mixture guarantees a superior flavor profile. Use an even ratio of water to white vinegar, blending in equal parts salt and sugar. Sugar acts to cut acidity without turning the onions entirely sweet. For that signature pretty pink blush, slice two to three thin pieces of beetroot and drop them into the liquid. Gentle aromatics can dramatically elevate your homemade batch. One may include a few whole black peppercorns, coriander seeds, a slit green chilli, or a small cinnamon stick. Keep these additions minimal so the onions remain the primary focus of the recipe. Heat the vinegar mixture gently until all salt and sugar completely dissolve. Once cooled down to room temperature, pour this liquid over your prepared shallots, ensuring they are fully submerged. Refrigerate everything for 12 to 24 hours to let the liquid work its magic. Make smaller batches as needed and store them consistently in the fridge for maximum crispness.
