Ingredients:
- 250 grams chickpeas
- 1/4th cup almond butter
- 1/4th cup maple syrup
- 1/2 cup almond flour
- 1/4th tsp vanilla extract
- 1/4th tsp Himalayan salt
- Chocolate chips
For Coating:
- 3/4th cup chocolate chips
- 1 tbsp coconut oil
Instructions:
- Combine chickpeas, almond butter, maple syrup, vanilla extract, and salt in a food processor or blender. Blend until the batter is smooth.
- Gently fold in the almond flour and chocolate chips by hand. If the batter is too runny, add more almond flour.
- Shape the dough into balls and place them on a tray lined with parchment paper.
- Freeze for 30 to 60 minutes to allow the balls to firm up.
- Melt the dark chocolate chips and add coconut oil.
- Dip each frozen ball into the melted chocolate, ensuring they are fully coated.
- Return the chocolate-covered balls to the lined tray and refrigerate to allow the chocolate to set.
- Refrigerate or freeze until the chocolate hardens, approximately 15 to 20 minutes. Enjoy!
