Ingredients:

 

For the Marinade:

 

8-10 pieces of chicken (mix of drumsticks, thighs, wings, etc.)

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

 

For the Coating:

 

2 cups all-purpose flour

1 tablespoon paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon dried thyme

1 tablespoon dried oregano

1 tablespoon salt

1 tablespoon black pepper

Vegetable oil for frying

 

Instructions:

 

Marinating the Chicken:

 

In a large bowl, mix buttermilk, salt, black pepper, paprika, thyme, oregano, garlic powder, and onion powder to create the marinade.

Add the chicken pieces to the marinade, ensuring they are well-coated.

Cover the bowl and refrigerate for at least 4 hours or overnight for best results.

 

Coating the Chicken:

 

In a separate bowl, combine flour, paprika, garlic powder, onion powder, thyme, oregano, salt, and black pepper to make the coating mixture.

Remove each piece of chicken from the marinade, allowing excess liquid to drip off.

Coat each piece thoroughly in the seasoned flour mixture, pressing the flour onto the chicken for better adherence.

Place the coated chicken on a wire rack and let it rest for about 15-20 minutes. This helps the coating set.

 

Frying the Chicken:

 

Heat vegetable oil in a deep fryer or large, deep skillet to around 350-375°F (175-190°C).

Carefully place a few chicken pieces in the hot oil, avoiding overcrowding.

Fry for about 12-15 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and has a golden-brown, crispy exterior.

Use a slotted spoon to remove the fried chicken and place it on a paper towel-lined plate to absorb excess oil.

Serve:

Allow the chicken to rest for a few minutes before serving.
