Spinach Dal (Palak Dal):

Ingredients:

1 cup yellow lentils (moong dal)

2 cups fresh spinach leaves, washed and chopped

1 medium-sized tomato, chopped

1 onion, finely chopped

2 cloves of garlic, minced

1-inch piece of ginger, grated

1 green chili, chopped (optional)

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon coriander powder

Salt to taste

1 tablespoon ghee (clarified butter)

Fresh coriander leaves for garnish

Instructions:

Rinse the lentils thoroughly and soak them in water for about 30 minutes.

In a pressure cooker, add soaked lentils, chopped spinach, chopped tomato, chopped onion, minced garlic, grated ginger, green chili (if using), cumin seeds, turmeric powder, coriander powder, salt, and 3 cups of water.

Close the pressure cooker lid and cook for about 3-4 whistles on medium flame or until the lentils are cooked well.

Once the pressure releases, open the cooker and mash the dal lightly.

In a separate pan, heat ghee and add it to the dal. Mix well.

Garnish with fresh coriander leaves and serve hot with steamed rice or chapati.

Methi Paratha (Fenugreek Flatbread):

Ingredients:

2 cups whole wheat flour

1 cup fresh fenugreek leaves (methi), washed and finely chopped

1 teaspoon carom seeds (ajwain)

1 teaspoon turmeric powder

Salt to taste

Water for kneading

Ghee or oil for cooking

Instructions:

In a mixing bowl, combine whole wheat flour, chopped fenugreek leaves, carom seeds, turmeric powder, and salt.

Gradually add water and knead into a smooth dough. Let it rest for about 15-20 minutes.

Divide the dough into small balls and roll them into round discs using a rolling pin.

Heat a griddle or tawa over medium heat.

Place a rolled paratha on the hot griddle and cook until bubbles start to appear on the surface.

Flip the paratha and drizzle some ghee or oil on top.

Cook until both sides are golden brown and crispy.

Repeat the process with the remaining dough balls.

Serve hot with yogurt or pickle.

Vegetable Khichdi:

Ingredients:

1 cup rice

1/2 cup yellow lentils (moong dal)

1 carrot, diced

1 potato, diced

1/2 cup green peas

1 teaspoon cumin seeds

1 teaspoon turmeric powder

Salt to taste

4 cups water

Ghee for tempering

Fresh coriander leaves for garnish

Instructions:

Rinse the rice and lentils thoroughly and soak them in water for about 30 minutes.

In a pressure cooker, add soaked rice, lentils, diced carrot, diced potato, green peas, cumin seeds, turmeric powder, salt, and 4 cups of water.

Close the pressure cooker lid and cook for about 3-4 whistles on medium flame or until the khichdi is well-cooked and mushy.

Once the pressure releases, open the cooker and give the khichdi a good stir.

In a separate pan, heat ghee and add it to the khichdi for tempering.

Garnish with fresh coriander leaves and serve hot with a dollop of ghee on top.
