Bhubaneswar, Mar 20: Odisha Chief Minister Mohan Charan Majhi, Leader of Opposition Naveen Patnaik, and several other prominent figures extended their warm greetings to the people of the state on the occasion of 'Pakhala Divas'—a day dedicated to celebrating the state’s beloved staple food.
In his message, Chief Minister Majhi praised ‘Pakhala’ as a symbol of Odia culture and pride, and even expressed his personal fondness for the dish.
Taking to X, he said, “Pakhala is not just a dish, but a symbol of Odia culture and linked to the state's ‘asmita’ (pride). It is my favourite. Pakhala is an essential part of Odia lifestyle. Heartfelt greetings to everyone on 'Pakhala Divas' today."
BJD President and Leader of Opposition Naveen Patnaik also shared his thoughts, highlighting the dish’s cultural significance: "Pakhala holds a unique place in Odia tradition. I extend my warm greetings to all on #PakhalaDivas."
‘Pakhala,’ a traditional Odia dish made from rice, is believed to have its origins at the Jagannath Temple in Puri. Widely enjoyed during the hot summer months, it is known for its cooling properties and is thought to aid digestion. The dish is typically prepared by soaking leftover rice in an earthen pot with water, allowing it to ferment over several hours.
There are various versions of Pakhala, including ‘Basi’ (fermented), ‘Saja’ (fresh), ‘Dahi’ (curd), ‘Sugandhi’ (fragrant), and ‘Meetha’ (sweet) Pakhala, each with its own distinct flavor profile. It is usually served with a variety of side dishes, such as fried potatoes, brinjal, greens, and fish fry.
Once considered a humble food of the working class, ‘Pakhala’ has gained newfound popularity in upscale dining settings, with specialty ‘Pakhala Thalis’ now being served in five-star hotels.
