 Ingredients:

For Kadhi:

1 cup gram flour (besan)

2 cups yogurt (curd), beaten

1 teaspoon ginger, grated

1 teaspoon green chili, finely chopped

1/2 teaspoon turmeric powder

1 teaspoon red chili powder

Salt to taste

2 tablespoons oil or ghee

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1/4 teaspoon asafoetida (hing)

8-10 curry leaves

2 dry red chilies

2 cups water

For Pakoras (optional):

1/2 cup gram flour (besan)

1/2 cup finely chopped onions

1/4 cup finely chopped spinach (optional)

1/2 teaspoon red chili powder

Salt to taste

Water (as needed to make a thick batter)

Oil for deep frying

For Serving:

Cooked rice

Instructions:

For Kadhi:

In a bowl, mix gram flour, beaten yogurt, ginger, green chili, turmeric powder, red chili powder, and salt. Whisk until smooth.

Heat oil or ghee in a pan. Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, curry leaves, and dry red chilies. Saute for a minute.

Pour the gram flour and yogurt mixture into the pan, stirring continuously to avoid lumps.

Add water gradually, stirring continuously to maintain a smooth consistency. Bring it to a boil and then simmer on low heat for about 15-20 minutes, stirring occasionally.

 For Pakoras (Optional):

In a separate bowl, mix gram flour, chopped onions, chopped spinach (if using), red chili powder, and salt.

 Add water gradually to make a thick batter.

 Heat oil in a pan for deep frying. Drop small portions of the batter into the hot oil and fry until golden brown. Drain on paper towels.

 Final Steps:

If you made pakoras, add them to the kadhi just before serving.

 Adjust the consistency of the kadhi by adding more water if needed.

 Serve hot kadhi over cooked rice.

 Garnish with chopped coriander leaves if desired.
