1. Bajre ki roti and Lashun ki Chutney

The ‘Bajre ki roti’ is made using bajra millet which is a very popular and healthy flatbread. It is served with onions and Lasun ki chutney which is saucy preparation made with garlic which has been a great combination and amazing to taste.

2. Dal Bati Churma

The main Rajasthani dish comprises of Bati, wheat bread stuffed with onion and peas and then dipped in ghee. It is best when had with Dal and Churma mashed bread varied with ghee and sugar which make it lazeez.

3. Panchmel ki Sabzi  

Its name derives that it is an amalgamation of five vegetables seasoned with a mix of aromatic spices and gets its tangy flavour from the use of dried mango powder which is known as amchur. It is can served with chapatti and rice.

4. Khichdi  

Whenever one say of Khichdi, it is believed that it is a wholesome and healthy meal which is made using rice and different pulses. However, in Rajasthan, it is made by making use of wheat, jowar and bajra in place of rice. Some of the famous ones are Gehun ki Bikaneri Khichdi which is made using wheat and moong dal that can be best had when served with ghee, curd and mango pickle; and Bajra khichdi which is made of bajra black millet  and yellow moong dal split yellow gram and best when had with either curd or raita.

 5. Gatte ki Sabzi  

This is a digestive item which is a popular curry of Rajasthan which is made of gram flour balls with the gravy being prepared by buttermilk and different spices. It can be consumed with both roti and rice.
