Culinary Corner- Satya Das‘s Immune Booster Herbal Tea

My learning has been great during the lockdown period; this aspect of learning was greater than what we had been taught during our formative days. Working at the front has its own enchant and disenchant.  The entire inbound guest has to go through the front office; we are the face of the properties. All of them have their whims and fancies and we mask it with a smile. During this lock down one has learnt to be more resilient, patience and acquired quite a bit of knowledge on food and beverages helpful for body immunity – especially the guest who got stuck with us due to lock down.

Been an ardent follower of Auyurvedic practices; I picked up some nuances of beverages from the guest which are helpful to the body. Ayurveda focuses on diet to have a healthy life. Ayurveda tells us regarding the three ‘Dosha’ – VATTA, PITTA, and KAPHA. These three aspects are present in the body and we need to keep a harmony and balance of these for a healthy life. Based on these Doshas we need to have a particular diet. We will be discussing on the beverages required for each Doshas or Health types

Vatta Dosha: We need to have Herbal teas, milk, fruits and vegetables juice. Avoidance should be on tea in any form, caffeinated and carbonated drinks.

Pitta Dosha: Prefer coconut water, green vegetables juice, fruit juice – berry, mango, and guava. Edible plants and flowers brew and juice – hibiscus, lavender, rose and jasmine tea. Always avoid fermented and alcoholic drinks.

Kapha Dosha: As per the dosha genre, have warm drinks – black or green tea, spiced up with cardamom, ginger and cinnamon, and brewed fenugreek and vegetable juice. Avoidance should be for dairy products, seed milk and sugary drinks.

Though many have shared their bit of knowledge on this, but have developed a curated drinking after long tasting sessions with our Executive Chef – Pranay. It has come out good and it balances the three ‘Doshas’ of our body.

The immune Booster Herbal Tea which can be easily made at your home with the basic ingredients

INGRIDENTS: Ginger 20 Gram, Bay leaf – 1 Leaf, Cloves 4 Pieces, Cinnamon 1 Stick, Turmeric powder  ½ tsp, Mint and Basil leaves  5 Leaves each, Two Cups of water, Jaggery 20 gms, One Lemon wedges

PREPERATION TIME: Ten Minutes

SERVES: One

PREPARATION: Add 2 cups of water to a Sauce Pan with all the above ingredients, except Jaggery & Lemon wedge (If you can’t find fresh turmeric use the powder form). Heat the mixture until it comes to half the quantity, this helps in infusing to make a good decoction, then add Jaggery to it with one lemon wedge juice. Now enjoy this delicious Healthy tea twice in a day which will help in boosting your immune system.
